Kronos® durum wheat, originally from Arizona, is one of the finest varieties of wheat in the world, with unique physical and milling features that make it particularly suitable for pasta making, such as:
- its very high yellow index (carotenoid content)
- its high protein content
- its very high gluten content
- its high gluten strength.
The Kronos® wheat used for the production of Valdigrano Superior Quality Pasta is produced by Molino Grassi exclusively from wheat grown in Italy. Thanks to the Mediterranean climate, this variety of wheat not only maintains its original qualitative and organoleptic characteristics, but also enhances them. Molino Grassi is the exclusive producer of Kronos® wheat in Italy and it is the only company that can affix the “Kronos® wheat” indication on its products.
